Stuffed Mushrooms with Guacamole Recipe

Are you preparing a party and want to surprise with a super original appetizer? The stuffed mushrooms that we offer you are very different from the traditional ones. These vegetarian stuffed mushrooms are served warm or cold and can be eaten in one bite!

As a big fan of vegetarian recipes that I am, I wanted to try something fresh and with a spicy touch, so I have prepared these mushrooms stuffed with guacamole and I have loved the result. Write down this dish and you will see that the recipes with guacamole are not only eaten accompanied by corn nachos.

Ingredients to make Guacamole Stuffed Mushrooms:

  • 6 mushrooms
  • 1 avocado
  • 1 tomato
  • 1 piece of spring onion
  • 1 splash of lemon juice
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 pinch of Tabasco
  • 1 jet of olive oil
  • 1 pinch of fresh mint

How to make Guacamole Stuffed Mushrooms:

We gather all the ingredients to prepare the mushrooms stuffed with guacamole. To prepare this recipe for stuffed mushrooms we have chosen large mushrooms, so it will be very easy to place the stuffing inside. We remove the stem of the mushrooms and wash them in plenty of water so that there are no traces of earth. Place the mushrooms in a baking pan, put a little salt on top, and put them in the oven at 190ºC while we prepare the guacamole, about 12-14 minutes. To prepare the guacamole: chop the onion very finely and mix it together with the tomato, peeled and also cut very small.

Cut the avocado in half, remove the central bone and scoop out the flesh with the help of a spoon. Add the avocado to the bowl and sprinkle with a little lemon juice so it doesn’t brown. Mash the avocado with the help of a fork until it becomes a puree. Season the guacamole with salt, a few drops of Tabasco (to taste) and olive oil. Remove the mushrooms from the oven and let them cool. Fill the mushrooms with the guacamole and decorate with a little fresh mint.
