The quiche is like a soft cake that is normally made with the famous short crust pastry or flange and is filled with cream and other ingredients.
In this case, let’s prepare a quiche with spinach and goat cheese and although the most traditional is the famous quiche Lorraine that is made with bacon, we have decided to modify the recipe by adding a touch of green spinach and the characteristic flavor of goat cheese.
Ingredients to make Spinach and Goat Cheese Quiche:
- 1 sheet of short crust pastry or short crust pastry
- 180 grams of fresh spinach
- 4 Eggs
- 100 milliliters of liquid cream
- 200 grams of goat cheese
- 150 milliliters of whole milk
- 200 grams of smoked bacon
- 100 grams of grated Emmental cheese
- 1 pinch of salt and pepper
How to make Spinach and Goat Cheese Quiche:
We gather all the ingredients and turn on the oven at 180º C. to heat up. You can cut the bacon into thin strips or buy the one that already comes in cubes. As for the goat cheese, it will suffice to use a small roll and the Emmental can be replaced by any other cheese that can be used as a gratin. To prepare this homemade spinach homemade we will use a 26 cm mold. Diameter.
We start by greasing the mold with a little butter or if we prefer, we line it with parchment paper. Then, we extend the quiche dough and prick it with a fork to prevent it from swelling during cooking.
Then, cover with another sheet of parchment paper and place something heavy on top, for example dried chickpeas or lentils. Cook the short crust pastry in this way for 10 minutes. Remove and reserve to cool. When the dough has cooled, remove the weight and the baking paper that covers the base and place slices of goat cheese all over the surface.
Place a single layer of cheese, if you have some cheese left over, you can use it to make a salad, such as duck ham and honey salad.
We will place the bacon on the layer of goat cheese, but we will place it crispy. To do this you can fry the bacon strips in a pan, without using any oil, or put it in the microwave, on a plate covered with an absorbent paper towel for a minute. Discard the oil that has released the bacon.
Next, sauté the spinach in the pan with a drop of oil until soft. You can also use a little butter instead of oil.
To finish with the filling of our quiche, we beat the eggs with the cream and milk until completely integrated. When we get it, add the Emmental cheese and spinach to the mixture.
Stir again and pour this mixture into the mold with the dough, the goat cheese and the bacon.
Top with a little more Emmental cheese or any other gratin cheese and cook the quiche in the oven for about 30-45 minutes.
After this time, the filling should be curdled and you can check the quiche is ready just like you do with homemade sponge cakes, with the toothpick test.
