Sautéed mushrooms with amaranth recipe

Ingredients to make Sautéed Mushrooms with Amaranth:

  • 1 cup of amaranth
  • 250 grams of chopped mushrooms
  • 2 chambray onions
  • 1 dried chipotle chili
  • 1 sprig of thyme or aromatic herbs

How to make Sautéed Mushrooms with Amaranth:

We start by roasting the amaranth seeds in a pan. We put everything on medium high heat and move with a wooden palette. In the same frying pan, place a splash of olive oil and sauté the finely chopped cambray onions.

After 1-2 minutes add the mushrooms and continue to sauté the whole. To make this recipe with amaranth seeds you can use any type of mushroom or a combination of mushrooms. To finish, when the mushrooms are almost ready, add the amaranth together with a little water, the aromatic herb and the finely chopped chipotle chili. Remove, correct the seasoning if necessary and cook everything for a couple more minutes.

Sautéed mushrooms with amaranth are a great dish, you can serve them as a main when preparing a vegan menu and combine with a green salad and a little legumes to taste.
