Salty Puff Pastry Palmeritas Recipe

Many dishes can be prepared with puff pastry and, without a doubt, a very famous one is the puff pastry palmeritas, which in fact can be both sweet and savory.

So, what we are going to prepare next is a delicious quick and easy appetizer made with vegan puff pastry and it is about some delicious palmeritas of olives and peanuts, an extraordinary combination of flavors that will surprise you.

Imagine being with friends at home, enjoying a meeting and livening up the evening with a plate of crudités with hummus and salty puff pastries as original as these. I’m sure you’ll succeed! Let’s go then with the recipe for these vegan appetizers and get ready to enjoy some salty puff pastry palmeritas like you’ve never tasted them before.

Ingredients to make salty puff pastry Palmeritas:

  • 1 handful of raw peanuts
  • 1 teaspoon of fennel seeds
  • 2 cans of pitted black olives
  • 1 sheet of vegan puff pastry

How to make salty puff pastry Palmeritas:

First we will start to make the palmeritas filling. To do this, crush a good handful of raw peanuts until they are like crumbs, they do not need to be powdered.

For this vegan recipe, it is best to use thin-skinned peanuts. As for appliances, you can use a traditional blender or a food processor. Next, lightly toast the peanuts in a pan together with the fennel seeds. Reserve.

We also crush the pitted black olives, previously drained. If you want to skip this step, you can buy olive paste directly.

Tip: If you want to change the filling, you can use normal peanuts and roast them with other types of seeds or none at all. We do this to give an extra flavor to the mixture

Now that we have the ingredients for the filling ready, we move on to assembling the salted palmeritas. The first thing will be to extend the sheet of puff pastry and mark it in half, lengthwise, as seen in the photo.

First, we spread the entire surface with the olive paste, trying to cover all the edges well, and then sprinkle all the roasted peanuts on top.

When we have placed all the filling, we cut the sheet along the mark we had made, obtaining two halves. Then, to shape the salty palmeritas, we will roll each half towards the center from the two longest sides, as seen in the photo. It is important that everything is tight. The trick to make it much easier to cut the palmeritas is to slightly freeze the rolls, so reserve in the freezer for about 15-30 minutes and then cut slices of 1 cm more or less, with the help of a very sharp knife.

Place the salted palmeritas on a baking tray, lined with parchment paper, and cook for 10 minutes at 190 °C.

Remember to fix any palm trees that don’t look pretty or that have unrolled when you cut.  It is also important that you check the oven after the first 5 minutes, since these vegan palmeritas cook very quickly. With this wonderful recipe you will get between 50 and 60 salty puff pastry palmeritas, a fantastic vegan recipe to present during mid-afternoon snacks or as an appetizer at a family gathering, they are delicious! And you can eat them in one bite.
