I don’t know why I don’t make this amazing cod empanada with raisins and pine nuts more often, because I like empanadas! Especially the homemade dough, of course. It costs nothing to prepare and the empanadas are clearly better.
Although the tuna and pepper empanada is another of my favorites, this time I share another gem. Why is it so: a gem? A filling of scandal: cod with raisins and pine nuts and a rustic dough of whole spelled that turns this empanada into a real delicacy. Healthy and delicious food, just the way I like it. Ingredients to make Empanada of cod with raisins and pine nuts:
For the cod pie dough
- 300 grams of whole spelled flour
- 1 sachet of baker’s yeast
- 100 milliliters of olive oil
- 100 milliliters of water
- 1 pinch of salt
- 1 Egg or a little milk to paint the dough
For the cod pie filling
- 250 grams of crumbled desalted cod
- 1 onion
- 1 handful of sultanas
- 1 handful of pine nuts
- 1 splash of white wine
- Olive oil
How to make Cod Empanada with Raisins and Pine Nuts:
To start making the cod and raisin empanada dough, mix the flour and yeast in a bowl and add the water. Next, add the oil and salt.

Make a ball and let it rest, covered with a damp cloth, until it doubles in volume, for at least 30-45 minutes so that the Galician cod and raisin empanada is perfect.
While the dough rests, we prepare the filling for the cod pie with raisins and pine nuts. To do this, brown the chopped onion in a pan with a little oil. Next, we add the cod (remember that it is already at its point of salt). Mix and let cook for a couple of minutes. Next, add a splash of white wine and let it cook. Finally, add the raisins and pine nuts and stir. Let cook until we see that everything is done and the wine has evaporated. Remove from heat and let cool. When the dough is ready, flour a flat surface and smooth it out with a wooden rolling pin or something similar.
When we have the desired thickness, we take half of the dough, put it on a plate or oven mold and fill the empanada with the previous preparation. With the rest of the dough, we cover the filling and, making some folds on the edges, we join both covers and close the Galician cod pie with raisins. Finally, we paint with a little beaten egg or milk and put the cod pie with raisins and pine nuts in the oven already hot at 180 ºC for 30 minutes.
Once the time has passed, we take the empanada out of the oven and wait for it to cool down a bit before serving. You will see, this recipe for Galician cod pie with raisins is infallible. It’s solo good, there won’t be any leftover crumbs!
