On this occasion, together with this article, we teach you how to make healthy carrot and oatmeal pudding. The result will be a spongy and moist preparation, very aromatic and tasty. You will want to eat it at any time, however, we recommend it for breakfast or a snack with your favorite infusion. Let’s cook!

Ingredients to make Carrot and oatmeal pudding:

  • 160 grams of carrot
  • 2 egg
  • 140 grams of oat flour or flakes
  • 50 cubic centimeters of neutral oil
  • 60 grams of sugar or 1 dessert spoon of sweetener suitable for cooking
  • ½ teaspoon of orange essence
  • 1 teaspoon nutmeg
  • ½ teaspoon ginger powder
  • 1 teaspoon cinnamon
  • ½ teaspoon turmeric
  • 1 teaspoon of baking powder
  • ½ teaspoon bicarbonate of soda
  • 100 cubic centimeters of milk or vegetable drink

How to make Carrot and Oat Pudding:

  1. To get started with the easy carrot and oatmeal pudding recipe, first make the oatmeal. If you have this type of flour, you can start with step 2.
  2. If we do not recommend watching the video below for more detail, you will see that you only need to process the flakes until you get a flour.
  3. Beat or process the oil and sugar until dissolved.
  4. Add the eggs one at a time while continuing to beat until foamy.
  5. Mix the egg foam, oil and sugar with the finely grated or pureed.
  6.   In that case, you can peel it, cut it into cubes, and microwave it in a covered container. You can also steam it for about 3 and 7 minutes, respectively.
  7. These two types of cooking will result in a puree that is not as moist as if you cooked it boiled. In addition, this way it also keeps all the nutrients available, instead of losing them to the water.
  8. Next, alternate half of the oat flour with half of the milk or vegetable drink and mix them together
  9. Hack:if you prefer, you can also replace half of the oatmeal in the carrot pudding with whole wheat flour.
  10. Alternate half of the milk or vegetable drink and the remaining dry ingredients: oat flour, seasonings, baking powder, and baking soda.
  11. You can reserve a part of the unprocessed oats, to enjoy the whole flakes, always staying within the amounts of the recipe.
  12. Trick: if you want to incorporate nuts, you can do it, you just have to mix them with a little of the flour from the recipe so that they do not settle in the bottom of the mold.
  13. The result will be an exquisite carrot, walnut and oatmeal pudding!
  14. Prepare a mold by greasing it with oil. In this case, it is 6x23x10. Adjust the amounts of this recipe according to the mold you are going to use.
  15. Pour the preparation of the easy carrot pudding into it to cook it in the oven at 180ºC for approximately 20-30 minutes.
  16. After the time has elapsed, click the pudding in the center to confirm that it is cooked. You will know if there are no remains of the preparation on the knife or toothpick.
  17. Wait until it warms up to remove it from the mold and, until it cools down, to try it.
