  • 6 pieces of potato
  • 300 grams of fresh Longaniza
  • 1 cup sour cream
  • 1½ cups grated cheese
  • ½ piece of fresh lettuce
  • 1 pinch of salt
  • 1 pinch of pepper
  • ½ cup of oil

How to make potato quesadillas with longaniza:

These are the ingredients that we will need to prepare these delicious potato quesadillas with longaniza. To start we cook the potato : for this we place it in a saucepan with enough boiling water, add a pinch of salt and let it cook over high heat for approximately 30 minutes, or until it feels very soft. Once the potatoes are very soft, remove them from the hot water, peel them perfectly, place them in a bowl, add a little finely chopped onion, a pinch of salt and a pinch of pepper, then we puree them with the help of a crushing tool.

On the other hand, we take the sausage and place it in a saucepan with very hot oil, fry it until it turns golden. Once ready, we remove it from the saucepan and reserve it for a moment. Once the mashed potatoes and the well-fried longaniza are ready, we take both and mix them perfectly well in a deep bowl. Now we take a ball of the corn dough, and we form our tortilla with the help of a tortilla maker or, as in my case, with the help of the base of a plate and a smooth, flat surface. We form our corn tortilla and fill it with the mixture that we have just formed. We fold the potato quesadilla and seal the filling perfectly.

Once all our potato quesadillas with longaniza are ready, we take them to fry in a frying pan with very hot oil, letting them brown very well on both sides. Once ready and golden, remove them from the oil, place them on absorbent paper to remove excess oil and serve the hot potato quesadillas with longaniza accompanied by grated lettuce, grated cheese and sour cream.
