  • 2 cups of Lentils
  • 2 units of Lemon
  • 1 tablespoon of fresh coriander
  • 1 teaspoon onion powder
  • 1 teaspoon of garlic paste
  • 1 unit of purple onion
  • 1 can of sweet corn
  • 1 unit of Avocado
  • 1 pinch of ginger powder
  • 1 pinch of red pepper
  • 1 pinch of salt

How to make Lentil Ceviche:

The first thing you must do to make this vegan recipe is to pre-list the ceviche ingredients. Remember that you must hydrate the lentils in water for approximately one or two hours. After the hydration time, cook the lentils until they are soft and let them cool. Take a deep plate and add the sweet corn, with the cold lentils and the finely chopped red onion. Mix the ingredients of our vegan ceviche well. Add the lemon juice, onion powder, garlic paste, ginger powder, red pepper and salt. Mix the ingredients well until they are integrated. Finally, add the avocado in small squares and the finely chopped coriander. Rectify the flavor and, if you wish, add a little more of an ingredient that is to your liking.

Serve the vegan lentil ceviche recipe by adding a lemon wedge and accompanying it with slices of plantain, which can be packaged or homemade green plantain to stones.
