Ingredients to make dulce de leche mousse:
- 4 egg whites
- 8 tablespoons of sugar
- 200 grams of milk cream
- 300 grams of dulce de leche
How to make dulce de leche mousse:
- Heat the egg whites together with the sugar in a bowl over a bain-marie and mix over low heat.
- When the sugar is dissolved and the whites have risen and are foamy, remove the mixture from the water bath and continue beating until a meringue consistencyis formed.
- It has to be white and peaks should form. You can use an electric mixer for this step.
- Tip: Do not beat the egg whites excessively, they should be soft. Otherwise, the mousse may remain runny.
- Reserve the previous preparation. Now, beat the cream without forming a Chantilly.
