Dulce de leche cake, a simple, rich and no-bake cake. Without a doubt, this is a cake that if you try it you will repeat, since it is very good, juicy and with a mild flavor of dulce de leche. We do not put sugar in it because the dulce de leche has a lot, although it should be noted that by adding milk and cream the sweetness is greatly reduced. Therefore, if you want it to be sweeter, you can add a few tablespoons of sugar.

Ingredients to make Dulce de leche cake:

  • 500 milliliters of whipping cream (milk cream)
  • 500 milliliters of milk
  • 200 grams of cream cheese
  • 3 envelopes of curd or agar-agar
  • 400 grams of dulce de leche
  • 150 grams of cookies
  • 75 grams of butter (⅓ cup)

How to make Dulce de leche cake:

  1. Prepare the base of the cake. To do this, crush the cookies with a food processor or with a rolling pin and melt the butter by putting it in the microwave for a few seconds.
  2. In a bowl, mix the cookies with the butter until they form a moist paste.
  3. Cover the bottom of are movable mold with the dough and place it in the fridge for about 30 minutes to start preparing the filling for the dulce de leche tart.
  4. Tip: We have used a mold of about 23 cm.
  5. Put a casserole on the fire with the cream and half of the milk. When it starts to get hot, add the cheese and dulce de leche. Go stirring so that it is all waste and well mixed.

  7. While the saucepan preparation is heating up, pour the remaining milk into a glass and dissolve the curd envelopes one by one, stirring constantly so that they dissolve well.
  8. If you prefer, you can use three sheets of neutral gelatin or agar-agar.
  9. When the mixture in the saucepan begins to boil, add the milk with the curd and mix with a few rods.
  10. Once you observe that the preparation begins to thicken and boil, remove the saucepan from the heat.
  11. Let the mixture sit for about 10 minutes to temper, stirring to prevent a solid layer from forming on top.
  12. Take the mold out of the fridge with the biscuit base, add all the mixture and place the dulce de leche and biscuit cake in the fridge for 4-5 hours or leave it overnight.
  13. When serving, remove the cake from the fridge and carefully unmold it.
  14.  You can decorate the dulce de leche cakewith nuts, chocolate shavings, liquid caramel, crushed cookies, whipped cream or enjoy it without any decorations.
