Ingredients to make Ham, Cheese and Egg Croquettes:

  • 150 grams of flour
  • 100 grams of breadcrumbs
  • 3 units of Eggs
  • ¼ onion unit
  • 100 grams of Serrano ham
  • 200 milliliters of milk
  • 150 grams of grated cheese
  • 2 tablespoons of ground Garlic
  • 2 dessert spoons of salt
  • 2 tablespoons of oil

How to make Ham, Cheese and Egg Croquettes:

Before starting with the step by step to make some Serrano ham and cheese croquettes, we present the ingredients that we need.

Trick: You can replace the oil with butter. For our taste, lighter like this.

Peel and chop the onion. If you don’t like it very much at home, chop it as finely as you can and they won’t even notice. In a saucepan with water we will cook two of the eggs. Heat the oil in a large saucepan, and when it is warm, poach the onion with the salt. We let the onion sweat so that later the ham, cheese and egg croquettes have that juice. When they have cleared completely, add the garlic powder. If they were garlic cloves, they would have to be added when the onion began to whiten. We also add the ham.

Immediately after we begin to add the flour and milk, stirring constantly. Of flour I do not recommend more than a couple of tablespoons or we run the risk that they will be pasty like the croquettes purchased. We move well until we obtain a smooth and light dough. Now it is the turn of the grated cheese, but with the fire at a minimum so that the dough of the ham and egg croquettes does not stick. You will see that it takes body. When you can hold the spoon without it falling, you’re done. In the time it takes for the dough of the ham and cheese croquettes to be ready, the eggs will have cooked. They are peeled and chopped.

Add the chopped egg to the base dough and mix well. This is left to rest for a couple of hours in the refrigerator covered with transparent film. After this time, we can make the croquettes of the size and shape that we want. We coat them first in flour, beaten egg (the third that we had not cooked) and breadcrumbs, and fry them in the pan with plenty of oil.
