In this opportunity you will learn to prepare a delicious fish ceviche with a different touch since we will add some seafood such as octopus, shrimp and scallops. In this case we will use the variety of octopus known as baby octopus, which is a small type of octopus, hence the term “baby”, since it is an adult shellfish.
As with all mollusks, before starting to cook the bay octopus we must clean it very well. Unlike the larger variety of octopus, baby octopus requires much faster cooking to prevent overcooking. Ingredients to make fish, octopus and shrimp ceviche:
- 1 pound shrimp or prawns
- 2 white fish fillets
- 50 grams of roasted corn
- 6 baby octopuses
- 2 purple onions
- 1 bunch of fresh coriander
- 6 lemons
- 1 pinch of ginger
- 1 pinch of red pepper
- 1 pinch of salt
- 1 pinch of black pepper
- 1 pinch of garlic paste
- 1 cup of scallops
How to make Fish, Octopus and Shrimp Ceviche:
To start making the fish ceviche recipe you must prepare the ingredients.
Trick: You can choose the variety of white fish that you like the most.
Cut the white fish into medium squares, as shown in the photograph, and place it in a deep bowl with the lemon juice. Ideally, the fish is marinated in the juice for about 20 minutes. As the pH of lemon juice is so acidic, it is possible to denature the protein and cook it in it. While the white fish is marinating, prepare the seafood for the mixed ceviche. Then, take a deep pot with enough water over medium heat, clean the shrimp and the octopus (you must remove the skin and what is inside the head of the octopus).
Then, remove and discard everything removed. Once the water is boiling, add all the shellfish (shrimp, scallops, and octopus) and cook for 40 seconds, 60 seconds max. Remove them and stop cooking by passing the seafood in cold water. Cut the prawns and baby octopuses into medium squares and place them in the bowl where the white fish is. Mix well until the ingredients of the octopus ceviche are integrated. Finally, add the scallops and mix the ingredients well. Add the finely chopped coriander with the ginger, garlic paste and red pepper. Mix the ingredients of the fish and octopus ceviche well. The amount of spiciness depends on your personal tastes. Ideally, the octopus and fish ceviche should be as you can see in the photograph, with all the ingredients well distributed. Now, add the finely chopped red onion and salt to taste. Serve the fish, octopus and shrimp ceviche by sprinkling the toasted corn on top. You can also place a whole prawn or shrimp on each plate as a decoration.
