Cucumber and Avocado Sandwich Recipe

The vegan avocado sandwich that we prepare also has grilled cucumber and dehydrated onion, an irresistible combination that will surprise you… it did it for me!

Ingredients to make Cucumber and Avocado Sandwich:

  • 2 slices of vegan sandwich bread
  • ½ avocado
  • ½ Cucumber
  • 1 package of dehydrated onion
  • 2 slices of Tomato
  • 1 pinch of salt and pepper
  • 1 pinch of Herbes de Provence
  • 1 teaspoon lemon juice

How to make Cucumber and Avocado Sandwich:

Once you have all the ingredients at hand, we will start by peeling and cutting the cucumber into slices. Then season with a little salt and herbs de Provence and cook the slices in a hot skillet until lightly browned on each side.

On the other hand, cut the avocado into small pieces and mash it with the help of a fork, along with a few drops of lemon, salt, pepper and some spice if you like. The idea is to make an avocado paste. Now it’s time to assemble the cucumber and avocado sandwich. To do this, we will start by spreading one of the slices with a good layer of avocado paste. Right on top place the tomato slices and the roasted cucumber. The order of these ingredients does not matter and remember that you can use the variety of tomato that you like the most to make this dish. To finish and give our vegan sandwich a crispy touch, add a handful of dehydrated fried onion and finish by placing the other bread cover.

If you don’t mind the crunchy point, you can also add caramelized onion, the combination of flavors is just as exquisite. Enjoy the Cucumber Avocado Sandwich for dinner or a light summer meal. This vegan sandwich is very easy to make and delicious and if you want you can combine it with other flavors, also adding mango chutney instead of avocado for example.
