Chilaquiles recipe with beef

Chilaquiles are a traditional dish made in Mexico, which consists of tortilla chips dipped in sauce. There is a great variety that goes from the way in which the tortilla is used to prepare them (whether it is a tortilla cut into squares forming tortilla chips or a complete piece simply folded), to the type of sauce that is used or, also, depending on the region. In which they are made. This time we will present you some classic chilaquiles based on fried tortilla chips bathed in red sauce, with a touch of beef that will highlight their flavor and make them the family’s favorite dish.

Ingredients to make Chilaquiles with beef:

  • 12 pieces of corn tortilla
  • 300 grams of beef steak
  • ½ kilogram of red tomato
  • 3 pieces of jalapeno pepper
  • 1 clove garlic
  • ½ piece of Onion
  • ½ cup of oil
  • 1 pinch of salt
  • 4 pieces of Egg
  • 1 pinch of coriander

How to make Chilaquiles with beef:

We present the ingredients that we will immediately use for our chilaquiles with beef. To begin, we must form the tortilla chips with the corn tortillas. We do this by counting the tortilla in medium-sized squares. When we have formed our tortilla chips with the corn tortilla, we fry them by adding them to the pan with enough previously heated oil.

For the Mexican chilaquiles to be perfect, the homemade tortilla chips have to be quite crispy, as we can see in the image. On the other hand, we begin with the elaboration of the Mexican red sauce. For this we boil the red tomato, onion, garlic and chili.

Trick: I recommend adding a pinch of salt, this, in addition to flavoring the ingredients, accelerates the boiling of the water, therefore cooking them.

Eggs are just the accompaniment to our Mexican chilaquiles, so while the red sauce  ingredients finish boiling, and add them to a container of water for cooking. Once they are ready, we peel them, slice them and reserve them for the end of our recipe for chilaquiles with beef. Meanwhile, in another pan we will carry out the cooking of our beef steak, which is necessary to have it chopped. Add a little oil to the pan and let it heat up. When it’s ready, add the steak and stir constantly to cook.

When our red sauce ingredients are ready, we add them to the blender and proceed to blend them. In this way we will obtain a smooth sauce, without lumps, perfect to accompany the Mexican recipe. When the ingredients of the sauce are completely blended, we will add them to a small saucepan containing a little previously heated oil, to season our sauce. And we wait for it to be ready.

Trick: We know that our sauce is ready when there is no more foam on the surface.

Since we have everything ready, to serve the Mexican recipe we start by placing the homemade tortilla chips on a plate, well distributed. We bathe the tortilla chips with the perfectly seasoned red sauce and, immediately, we add the beef. To finish, we add a little grated cheese, chopped onion, sour cream and coriander. Also, to accompany our chilaquiles with beef, we add some slices of boiled egg. We can taste our delicious dish accompanied by other Mexican recipes such as chicken flautist or stuffed chilies.
