Ingredients to make White Corn Tamales:

  • A kilo of pork or chicken.
  • A kilo of white corn.
  • Four eggs.
  • A quarter of a bottle of oil.
  • Two onions.
  • Three mirasol peppers.
  • A ground yellow bell pepper.
  • A cup of milk.
  • Corn pans or banana leaves.

How to make White Corn Tamales:

You must have put the corn to soak since the day before. The next day you should boil it until the shell begins to come off. Once cooled, grind it in a hand mill, or blend it until it is very fine. In butter or oil, fry the ground pepper.

Pour it over the dough, which you will cook together with the milk and a little salt. Prepare the filling in this way; Cut the pork or poultry into very small pieces and fry with the garlic, diced onion, red pepper, salt and pepper. On the corn pans or banana leaves place the dough. In the center of it pour two tablespoons of filling. Now wrap them, giving them the traditional way. After tying them with strips of panca or banana leaves, cook them in a pot for half an hour, more or less.

If they have cooled down, don’t forget to heat them up again before bringing them to the table.
