Vegetable and Cheese Empanada Recipe

Ingredients to make Vegetable and Cheese Empanada:

  • 200 gr of frozen peas
  • 250 gr of courgettes
  • 4 frozen artichokes
  • 3 tablespoons of rice
  • 1 tablespoon grated cheese
  • 4 tablespoons of milk
  • 1 onion
  • 3 eggs
  • 1 slice of cooked ham of 100 gr
  • 1 package frozen puff pastry
  • Oil
  • Salt
  • Pepper

How to make Vegetable and Cheese Empanada:

Wash and cut the zucchini into cubes. Cut the onion very fine. Cut the ham into cubes. Beat the eggs with milk, cheese, salt and pepper. Add the uncooked rice, the peas, the artichokes cut into segments. Divide the puff pastry in two, one slightly larger than the other. With the largest, line a baking pan. Fill with the mixture and cover with the other half of the puff pastry. Fold the edges of the dough. Make some holes with a fork on top so that the cooking steam can escape and the dough does not burst. Bake for about 50 minutes at 190º C.
