Spinach and Tomato Whole meal Quiche Recipe

Ingredients to make Whole Spinach and Tomato Quiche:

  • 200g whole meal flour
  • 50g margarine
  • 1 egg
  • 2 tablespoons of water
  • 200g spinach
  • 200g tomato
  • 150g onion
  • 250g cream
  • 1 egg
  • 50g brie cheese
  • A pinch of nutmeg
  • Salt
  • 50g margarine
  • 80 g of grated cheese

How to make Whole meal Spinach and Tomato Quiche:

Mix the whole meal flour with the margarine, the beaten egg and two tablespoons of water. We knead until we form a ball that we introduce in the fridge for 30 minutes.

Later we stretch the dough with the rolling pin and place it on the base of the low cake mold, to which we have previously put a little butter and flour so that it does not stick. We will put baking paper and a weight on top (we fill a bowl with rice or beans so that it has weight and the dough does not rise during baking). Place in the oven for 20 minutes at 180ºC. Once baked, remove the paper and the weight from above and prepare the quiche filling. Cut the onion into julienne strips (thin slices) and fry it with a little olive oil.

When it is golden, we mix with the spinach until they are well fried and put the vegetables on the baked dough. On top of the vegetables we place a few pieces of brie cheese and a tomato cut into very fine slices. Then we make a mixture of cream, a beaten egg, nutmeg, salt and pour it over the spinach and tomato.

Sprinkle a little grated cheese on top and bake the whole until the surface is browned in the oven at 200ºC.
