Ingredients to make Zucchini Meatballs:

  • 1 zucchini
  • 1 piece of sweet onion
  • 1 clove garlic
  • 1 glass of breadcrumbs
  • 2 pinches of cumin, salt and ground parsley
  • 1 egg
  • 1 cup of wheat flour to coat
  • 1 glass of mild olive or sunflower oil

For the sauce

  • 2 bay leaves
  • 1 piece of carrot
  • 1 glass of red wine
  • 1 tablespoon of concentrated tomato
  • 1 pinch of oregano
  • 2 glasses of water

How to make Zucchini Meatballs:

Peel and crush the onion and garlic so that when mixing them with the rest of the ingredients you do not find large pieces. The objective of this recipe is none other than to highlight the flavor of the zucchini.

Clean and grate the zucchini without peeling. Next, place the grated zucchini on a sheet of kitchen paper, wrap it up and press to drain as much water as possible.

Return the drained zucchini to the bowl where you will make the meatball dough. To do this, add all the ingredients except the flour, which will be used to coat the zucchini balls. Do not forget to season the dough with salt, cumin and parsley to taste. Stir and knead to integrate everything.

Trick: If you need the dough to thicken more, you should add more breadcrumbs.

Prepare the pan with oil and let it heat up. Meanwhile, form the zucchini meatballs and coat them in flour. When you see that the oil smokes, it will be time to fry them. Of course, do not forget to prepare a dish with kitchen paper to place the fried meatballs there and to absorb the excess oil.

You can also make the zucchini meatballs in the oven by placing them on a tray lined with baking paper and cooking at 180ºC.

Tip: The oil must be very hot so that they brown and form a crispy shell and that they are very tender inside.

Your dish is going to win at times because in this step we are going to show you an easy and delicious sauce for zucchini meatballs. So, peel and cut the carrot into pieces. Reserve it, pour the two glasses of water into an express pot and bring it to evolution.

Add the rest of the ingredients to the pot, that is, the tomato, the carrot, the wine, the oregano and, finally, the bay leaf. Cover and cook for 5 minutes when the steam comes out. After the time, carefully uncover and blend the sauce without the bay leaves.

Put the zucchini meatballs in the pot with the sauce and let them simmer, uncovered, for a further 5 minutes. In this way they will absorb the flavor of the sauce and will be finger licking good.

Tip: You can also make zucchini meatballs with tomato and basil by adding this last ingredient to the sauce.
