Ingredients to make Seafood Croquettes:

For 4 people:

  • 500 grams of wheat flour
  • 5 liters of semi-skimmed milk
  • 400 grams of shrimp
  • 100 grams of onion
  • 2 cloves of garlic
  • White pepper
  • A grated nutmeg
  • Salt
  • 5 deciliters of olive oil

How to make Seafood Croquettes:

Chop the onion and garlic into brounoisse and fry in very hot oil. Add the flour and when it is well mixed, pour in the milk, which has previously been heated to its boiling point and seasoned with the grated nutmeg. The shrimp tails are peeled and chopped raw and reserved. Keep it over medium high heat and without stopping stirring, add the finely chopped shrimp tails, parsley, salt and pepper. Continue stirring without lowering the heat until you obtain a creamy and homogeneous paste. At this point, the paste is spread out on a plate to cool to room temperature. Once cold, it is cut into portions for croquettes, giving it the desired shape, larger or smaller according to taste. Beat the eggs and pass the croquettes, first in the flour, then in the egg and finally in the breadcrumbs, and then fry in a pan with plenty of very hot oil. The croquettes are removed to a tray or plate with kitchen paper to remove the fat from the frying and then they are transferred to the serving tray or plate accompanied by a hot tomato sauce.
