Baked cocadas are a very popular dessert or sweet in Latin America, it is considered one of the typical sweets of Mexico and, depending on the region, and it is made with different shapes and ingredients. The cocada is usually sold at parties and fairs throughout Mexico, also in typical candy stores, even in Monterrey there is a museum dedicated to typical sweets and this preparation is found there. The most popular recipe for making traditional cocadas is with grated coconut, milk, piloncillo and cinnamon, although there are other versions, such as the one we are going to present to you.

Ingredients to make baked Cocadas:

  • 2 cups of grated coconut (200 grams)
  • ½ cup coconut milk
  • 1 cup of whole milk
  • 1 stick of cinnamon
  • 3 egg yolks
  • ½ cup of sugar (100 grams)
  • 1 teaspoon vanilla
  • 2 tablespoons of corn starch

How to make Baked Cocadas:

  1. To make the baked cocadas recipe, first in a pot heat the whole milk, the coconut milk, the cinnamon and the vanilla, let it boil for about 3 minutes.
  2. Then, remove from the heat and reserve.
  3. In a bowl, mix the egg yolks, sugar and cornstarch. We advise you to use a fork or balloon whisk to obtain a lump-free mixture.
  4. Pour the mixture of egg, sugar and cornstarch into the pot of milk, it must be at room temperature.
  5. Mix and when everything has been integrated, return to medium low heat and cook for about 3 minutes.
  6. Tip: cocadas with condensed milk are also delicious. If you like this ingredient, you can add it in this step.
  7. Add the grated coconut, mix and finish cooking until you get a thick texture. It will take about 5 minutes or less.
  8. When the time has passed, remove from the heat.
  9. Let cool slightly and form discs about 2 cm thick. Next, place on a tray with waxed paper.
  10. Take to bake in the oven, it must be preheated for 30 minutes at 180 °Next, check the baked cocadas after 20 minutes and, if they are very golden, turn off the oven and leave inside for the remaining 10 minutes.
  11. After the baking time, let it cool completely and enjoy these cocada sweets.
