Learn how to prepare one of the most popular desserts in Argentina, rich and crunchy Argentinean pastelitos, also called Creole pastelitos. These sweets are made with squares of puff pastry and are filled with quince jelly. They are cooked fried in oil, bathed in syrup and decorated with colored sprinkles. This delicious dessert is usually prepared mainly during the national festivities season of Argentina, but it is not exclusive, since it can be enjoyed practically throughout the year.

Ingredients to make Argentine Pastelitos:

  • 500 grams of flour 0000
  • 200 grams of butter or vegetable shortening
  • 250 milliliters of water
  • 1 pinch of salt
  • 1 teaspoon lemon juice
  • 50 grams of corn starch
  • 300 grams of quince jelly
  • 1 cup of oil
  • ½ cup of sugar (100 grams)
  • ½ cup of water (120 milliliters)
  • colored sprinkles to decorate

How to make Argentine Pastelitos:

  1. Begin the recipe for Argentine cupcakes by placing the flour and a pinch of salt in a bowl, mix with a fork or balloon whisk.
  2. Add 100 g of butter and mix to obtain a sandy texture. We point out that you can mix with the help of a mixer or manually.
  3. Gradually add the water and lemon juice. When you have added these two ingredients, knead until you get a firmer texture.
  4. When you have the desired texture, wrap in plastic and let stand at room temperature for approximately 30 minutes.
  5. Now prepare the puff pastry. After the resting time of the dough for Argentinean cupcakes, roll out with a rectangular-shaped rolling pinto a thickness of about 2 or 3
  6. mm, then spread soft butter, sprinkle a little cornstarch and fold in half.
  7. Roll out slightly again and repeat the process of buttering and folding in layers.
  8. For the last layer, sprinkle with cornstarch and fold in half.
  9. In the refrigerator, let it rest for approximately 30 minutes.
  10. When the dough has rested, stretch it with a rolling pin and cut it into squares of approximately 8x8cm.
  11. Place a piece of quince jelly in the center of the square of the dough and moisten surrounding the candy.
  12. Next, close with another square of cupcake dough, pressing and folding the edges without meeting the ends.
  13. Heat oil in a frying pan and fry the sweet puff pastries. Spoon oil from the skillet over the cupcake so that the puff pastry opens up.
  14. We point out that the oil should not be very hot, otherwise the cupcake will brown very quickly and the dough will not cook well.
