In Mexico there are various recipes for enchiladas, there are green, red, mole, with chicken, with vegetables and many others. A very particular recipe that most Mexicans love is the Swiss enchilada, and how can you resist a tortilla filled with chicken, bathed in a rich sauce and gratin with plenty of cheese?
The original recipe is prepared with a non-spicy green sauce, but what do you think if you give it a different touch and prepare some delicious red Swiss enchiladas? Ingredients to make Red Swiss Enchiladas:
• 1 chicken breast
• 2 balls of black pepper
• 2 balls of allspice
• 1 clove garlic
• 1 tomato
• 1 red bell pepper
• 125 milliliters of chicken broth
• ½ stick of cream cheese
• 1 cup of half cream
• 8 slices of American or Manchego cheese
• 1 chipotle chili (optional)
• 1 pinch of salt to taste
• 1 package of corn tortillas
How to make Red Swiss Enchiladas:
To prepare the red Swiss enchiladas, first cook the chicken in enough water and add the peppers, the garlic clove and salt to your liking. Once ready, unravel and reserve.
Tip: you can cook the meat in a normal pot for about 35 minutes or use a pressure cooker for 15 minutes.
While the chicken is cooking, wash and chop the red bell pepper, cut the tomato and cook both ingredients in a pot with a cup and a half of water for 10 minutes.
Tip: you can use canned red bell pepper if you prefer, but if you decide to use this presentation, skip boiling it.
When the bell pepper and tomato are ready, add them to the blender with the half stick of cream cheese, the half cream, the chicken broth, a little salt and, optionally, the chipotle pepper. Blend very well and reserve. In a hot skillet, brown the tortillas a little, just enough to soften them a bit and not break.
Fill the tortillas with the chicken and roll them up. You can accommodate them in an oven refractory or start plating. Pour enough red sauce to completely cover the tortillas.
Add slices of American or Manchego cheese or, if you prefer, some other type of cheese, either grated or sliced, and gratin the red Swiss enchiladas in the oven for about 10 minutes. You can also make the red Swiss enchiladas without oven by gratin the cheese in the microwave.
Tip: if you prefer creamier enchiladas, choose to make the red Swiss enchiladas with Philadelphia.
