- Potatoes roasted and emptied to their pulp
- 100 grams of sliced mushrooms
- 100 grams of bacon in strips
- 100 grams of grated Parmesan cheese
- 4 tablespoons of milk
- 75 grams of butter
- 1 sprig of parsley
- 2 eggs
- Salt
- Pepper
- 1 chopped onion
How to make Cheese and Mushroom Stuffed Potatoes:
Make a puree with the potato pulp. Add 50 grams of butter, milk and yolks. Mingle. Sauté the onion and mushrooms in butter for about 10 minutes. In a separate pan, fry the bacon until crisp. Drain, add the mushrooms, bacon, grated cheese and parsley to the purée. Season. Beat the egg whites until stiff and mix them with the purée.
