Recipe for cold lombard rolls

Ingredients to make cold lombard rolls:

  • 8 leaves of red cabbage
  • 250 grams of cream cheese
  • 1 fresh spring onion
  • 8 pitted green olives
  • 8 anchovy fillets
  • ½ teaspoon chopped parsley

How to make Cold Lombard Rolls:

Cook the red cabbage leaves in boiling salted water for 10 minutes and once tender, drain and reserve. Chop the fresh onion together with the pitted green olives and mix with the cream cheese until a smooth paste is obtained. Spread the mixture over the cooked, cold and drained red cabbage leaf and add an anchovy to the mixture. Then roll up and chill for 30 minutes in the fridge. We serve the cold rolls cut up on toasted bread.
