Although it does not have a precise origin, it is usually found more easily in Mexican snack shops in Mexico City and, now, we bring you a dough recipe for fried quesadillas so that you can also find it at home when you have a craving.

Ingredients to make Masa for fried quesadillas:
• 2 cups of cornmeal (240 grams)
• 1 tablespoon of baking powder
• 2 cups of warm water
• 1 tablespoon of wheat flour or rice flour
• 1 tablespoon vegetable oil or butter
• Salt to taste
• ½ liter of oil
To accompany and stuffing
• Grated or shredded cheese
• Stew of your choice
• Lettuce
• Fresh cheese
• Homemade hot sauce
How to make Masa for fried quesadillas:
To begin with the preparation of the dough for Mexican quesadillas, mix the dry ingredients in a bowl: the two cups of cornmeal, a little salt and the baking powder. You can help yourself with a balloon whisk or a fork. Add the warm water little by little, mix constantly with your hands until you get a manageable dough.
Later, add the tablespoon of oil and the tablespoon of wheat flour or rice flour, this will make the quesadilla crispy on the outside and soft on the inside.
Trick: You can also make a dough preparation with cooked potato, this will give it a very rich flavor and it will be softer.
Once you have the dough, take a portion of approximately 50 grams. Crush it with the help of a tortilla press and have the filling you want to use for the quesadillas on hand. If you don’t have a tortilla press, you can put them on plastic wrap and flatten with a rolling pin or plate.
