The baskets are like open empanadas and, also, they are somewhat smaller than a cake or quiche, therefore, they are ideal to take as a lunch to work, school or university, as well as for an original family dinner. Also, this time, we will show you in simple steps and with few ingredients how to prepare irresistible onion and cheese baskets. Probably, its flavor reminds you of the classic fugazzeta pizza, however, we will add green onion to give it a touch of flavor. Unmissable!

Ingredients to make Onion and Cheese Baskets:

• 2 medium onions

• 60 grams of fresh cheese or mozzarella

• 1 teaspoon of oregano

• 1 teaspoon paprika

• 25 cubic centimeters of sweet wine

• 2 branches of green onion

• 6 pie shells

How to make Onion and Cheese Baskets:

To start with the recipe for onion and cheese baskets, you must first caramelize the onions with their own sugars. To do this, peel them and chop them into small cubes. Next, sauté in a pan over high heat with 1 teaspoon of oil until it begins to become transparent. At this point, lower the heat to medium and add 1 tablespoon of hot water. Repeat this procedure every time they dry, keeping in mind that the more times you do it, the sweeter it will be.  When you get your caramelized onions, add the previously cleaned and chopped green onions. Next, raise the heat to the maximum and add the sweet wine. Keep the vegetables on the fire while you notice the acrid smell of the alcohol. When the alcohol is evaporated, remove and take them to the container where you will finish preparing the filling for your baskets. Season the onions with the oregano and paprika to taste. Also add the cubed cheese.

Tip: If you’re making this recipe for someone who eats without salt, choose a low-sodium cheese.

Line the inside of the muffin tins with the empanada lids. This way, they won’t fall apart in the oven. Fill them with the onions and cheese to cook them for 7 minutes in an oven at maximum heat, enough for the tops to brown and the cheese to melt.

If you do not have this type of molds, you can use the cupcake molds, you must place them upside down, that is, covering the base with the dough, as you can see in the image. Cook the tapas for about 5 minutes in the oven until they are lightly browned. When the baskets are golden brown, they will be ready for you to fill them and heat them for an extra 3 or 4 minutes in the oven, so the cheese will melt. The delicious cheese and onion baskets are ready!

In this recipe we provide you with two options so that your baskets with empanada lids turn out perfect. However, if you do not have any of these molds, we have 2 more options so that you can still make them:

• Assemble the baskets with the dough and fill them before taking them to the oven, resting them on a previously greased roasting pan.

• You can also assemble the baskets and add a round piece of aluminum foil in the center so that, when heated, they keep their shape. Cook them for 5 minutes in the oven and, once golden, you can fill them and heat them for an extra 3 or 4 minutes so that the cheese melts.
