Potato cake is the best option if you have a meeting with several people, since it is quite filling and rich. On this occasion, we teach you how to prepare a recipe for vegan potato cake, because we will replace the meat with a lentil pin. If you want to make the vegetarian potato cake recipe, you can also include a hard-boiled egg to increase the protein load, but with the pine it is more than enough.

Its flavor has nothing to envy to the potato cake with meat, it is rich and much better when it is eaten still hot, and anyway this preparation can be kept for about 4-5 days before cooking it. If you are interested in knowing how to make vegan potato cake, keep reading!

Ingredients to make Vegetarian Potato Pie:

For the puree

  • 4 potatoes
  • 1 cup of non-dairy milk
  • 5 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon of nutmeg
  • 1 teaspoon of pepper

For the filling

  • 400 grams of cooked lentils
  • 1 small onion
  • 150 grams of mushrooms

How to make Vegetarian Potato Pie:

Wash the potatoes very well, peel them and cut them into medium pieces to facilitate cooking.

In a pot with enough water, add the potatoes and a handful of salt. Bring to a boil until the potatoes soften.

When they are soft strain the water and mash the potatoes, add the vegetable milk little by little so that it is integrated. Finally, add the oil, salt, pepper and nutmeg, and mix everything very well. Cut the onion into fine cubes and the mushrooms into medium strips.

Start by frying the onion in a pan with a tablespoon of oil, when they start to become transparent add the mushrooms and season with salt and pepper.

Tip: Preheat the oven to 180 ºC.

When the mushrooms soften, add the lentils and fry for 5 more minutes or until the flavors are well integrated. Make sure the sauce is not too dry.

Trick: You can season with a little garlic powder and merkén to give it more flavor.

Start assembling the cake by greasing the molds and placing the lentils, you can use individual molds or a large one about 20 centimeters in diameter. Cover the meatless potato cake with the last layer of puree and take it to the oven.

Cook the cake for about 20 or 30 minutes at 180 ºC, if you want to achieve a crispy gratin, add a few tablespoons of sugar on top and gratin for 5 minutes with heat only on top. Wait 5 minutes before serving to cool down and enjoy this delicious vegan potato cake.
