Ingredients to make La Damiana Croquettes:
For 4 people:
- 4 u. eggplants (large)
- 250 grams meat
- 2 u. egg
- 1dl milk
- 2 tablespoon flour
- Parsley
- Salt
How to make La Damiana Croquettes:
The aubergines are boiled and the skin is removed. The meat is mashed with a fork and the rest is minced very small. Mix the minced meat, the eggplant mash, the eggs, the milk, the flour and the parrigil. Milk and flour depends on how you suck the dough, it is preferable that the dough is not too thick. Pieces of this dough are put in the pan with the hot oil and they can be served with tomato sauce.
