Ingredients to make hard-boiled egg croquettes:
- 4 boiled eggs
- 30g onion
- 100g of flour
- 100g of butter
- 1 liter of milk
- Bread crumbs
- Nutmeg and salt
How to make Hard Boiled Egg Croquettes:
Cook the eggs in boiling water with a little salt and a dash of vinegar for 10 minutes, cool and peel. Fry the chopped onion in the melted butter with 2 tablespoons of olive oil and, before it turns color, add and fry the flour. Pour little by little and beat the hot milk into the flour with the butter. Stir until it acquires the desired consistency (thick) and add salt and nutmeg to the point. Cut the chopped hard-boiled eggs into quarters. On a tray place the chopped eggs and cover each piece of egg with the béchamel sauce. Let cool, form croquettes, pass through beaten egg and breadcrumbs and fry in plenty of hot oil. Once fried, remove them to a tray with kitchen paper to drain excess oil. Serve hot.
