Spinach pancakes are delicious. These tortillas are great for the little ones, since it allows us to introduce the spinach to them without them even noticing as they are tiny. In addition, with eggs they are very juicy. We have decided to add a little grated cheese so that we have much tastier spinach and cheese tortillas, however, you can do without it and put other ingredients that we like.

These tortillas are very showy, rich and easy to prepare, as well as nutritious. Spinach is rich in vitamins, minerals and fiber, and provides very few calories, which is why it is an essential ingredient in any diet to lose weight. Although it is true that the tortillas are cooked fried, something that is not recommended for this diet, it is also true that we can bake them if we want. Without further ado, keep reading to discover how to make spinach tortillas.

Ingredients to make spinach pancakes:

  • 300 grams of spinach
  • 2 cloves of garlic
  • 3 eggs
  • 2 tablespoons of flour
  • 1 glass of olive oil
  • 1 pinch of salt

How to make spinach pancakes:

Wash the spinach, peel and chop the garlic. We have chosen to prepare the tortillas with fresh spinach, however, it is also possible to use frozen spinach.

We put a satin on the fire with a jet of oil. Heat it over medium heat and, once the oil is hot, sauté the garlic and spinach for a couple of minutes. Do not let the garlic burn, which is why we do not recommend leaving it in the pan for more than this time.

In a bowl we put the beaten eggs, a handful of grated cheese, the flour, a pinch of salt and the spinach sautéed with the garlic. We mix everything well to form the dough for the spinach tortillas. To make a lighter version, we recommend removing the cheese.

Put a frying pan with oil over medium heat and, once hot, add portions of dough with a spoon to form the tortillas. To make them thin, we recommend spreading the dough a little with the same spoon and not adding too many at once. We let them cook on one side and when they are a little golden we turn them over to cook them on the other.

When they are golden on both sides, we take them out and leave them on kitchen paper to remove the excess oil.

And they are ready to eat! The recipe for spinach tortillas is very simple and quick to make, so in a short time we can have a delicious snack ready.
