  • 1kg boiled cassava
  • 3 beaten egg yolks
  • 2 tablespoons of sugar
  • 1 teaspoon salt
  • 4 cups of corn oil absorbent paper
  • 1/2 panela of white paper in pieces
  • 1 1/4 cups of water
  • 6 cloves

How to make Cuban Cassava Fritters:

We begin to make these Cuban yuccas by removing the veins from the yucca and grinding it until it has the consistency of a dough. Add the egg yolks, sugar and salt.

It is kneaded until there is a homogeneous mixture with small portions of the mixture, balls of about 2.5 cm are made. They are fried in abundant hot oil and over high heat, until golden brown. They are removed from the oil and placed on absorbent paper to remove excess fat. In a saucepan over low heat, dissolve the paper in the water and add the cloves, or until it thickens like molasses.
