Ingredients to make Ardoria:

  • 1kg tomatoes
  • 1 clove garlic
  • Stale bread
  • 1 green bell pepper
  • 1/2 cup pure olive oil
  • Salt

How to make Ardoria:

The tomatoes are peeled and crushed in the blender together with the pepper, the garlic clove, the salt and the vinegar (two teaspoons). Once it is well crushed, we add the bread (which will have been soaked in water) well drained, along with the oil. It is a variety of salmorejo, but in my opinion, healthier and richer. It is eaten cold, and you can chop a hard-boiled egg on the plate, add chips, fried fish, grapes, apples, and oranges… whatever you want.
