How to make Horchata de chufa without sugar:
- The first thing we must do to start preparing this sugar-free horchata de chufar is to hydrate the tiger nut. To do this, we put them in a casserole and cover them completely with the mineral water. We let them hydrate for 48 hours, changing the water every day to discard the residue that the tiger nut gives off. Otherwise, by absorbing the water the tuber will also absorb this residue.
- Once the tiger nut is hydrated, it is put in the blender with a glass of water and crushed until it is like a lumpy paste.
- Tip: You can also crush the tiger nut with an electric mixer if you don’t have a blender
- Now that we have a kind of paste, to continue with the preparation of the homemade tiger nut horchata, we add the rest of the water little by little so that the tiger nut is crushed as much as possible and, in this way, get all its flavor.
- Then, we add the sweetener and beat a little more so that everything is mixed well and we obtain a perfect sugar-free horchata de chufa.
- Then, we take a Chinese strainer to remove all the remains of tiger nuts that have remained and a finer and softer horchata remains. If you want the drink to be even more strained, you can pass it through a mesh strainer.
- Finally, we pour the unsweetened horchata de chufa in a jug, bottle or the container that we want and we reserve it in the refrigerator to preserve it and make it very cold. You can also put it in the freezer for a while and take it a little slush.
