Ingredients to make Chichi Mirada:
- 1 kilogram of purple corn
- 2 green water apples
- 1 large quince
- ¼ pineapple
- 4 cinnamon sticks
- 6 cloves
- ½ cup lemon juice
- 8 liters of water

How to make Chichi Mirada:
- To obtain a perfect chichi Mirada, wash all the purple corn well and then try to shell it completely. In this way, you will obtain the color and flavor that hides the interior of the corn crown.
- Rinse the apples and the quince. From the pineapple you will only use the peel and the core. Go chop everything into small pieces, as seen in the image, and also prepare the cinnamon sticks along with the cloves.
- In a large pot, add all of the above: the shelled purple corn plus the fruits and spices. Also, add all the water and let it boil over high heat for about an hour.
- How to know if the chichi Mirada will be ready? You will identify that all the ingredients have released their flavors and aromas when the kitchen is smelling delicious. Also, you will see that it has become a liquid with a lot of color. If the liquid still appears somewhat clear, wait a little longer. Here is the reference image.
- At this point, turn off the heat and let cool a bit. What follows is to strain all the liquid very carefully.
- Finally, this drink cannot be complete without the acidic touch that the lemon gives it. Pour all the lemon juice into the already strained chichi Mirada. Also add sugar to taste and for best enjoyment I recommend leaving the drink in the fridge for a couple of hours
