- In a saucepan, heat the milk together with the cinnamon sticks and the lemon zest, bring to a boil.
- In a very large bowl we beat the egg whites until they are stiff or when we turn the bowl our whites do not fall,
- When the whites are well assembled, add the powdered sugar and mix very well until a very well assembled meringue is left.
- Very carefully so as not to remove the air, we mix the meringue with the milk until we integrate very well.
- Serve very cold and sprinkle with a little ground cinnamon.
