Ingredients to make Black in Shirt:
- 225 gr. dark chocolate
- 1/2 teaspoon instant coffee
- 2 tablespoons Grand Marnier or Cointreau
- 6 large eggs
- 175 gr. of sugar
- 175 gr. of butter
- Salt
- 300 ml. liquid cream
- 2 tablespoons of sherry.
How to do Black on Shirt:
- Chop the chocolate and put it in a bowl.
- Dissolve the instant coffee in three tablespoons of hot water and add it to the chocolate along with the Grand Marnier
- Melt in a bain-marie and remove from heat.
- Separately, separate the yolks from the egg whites and beat the first with the sugar and butter.
- Add this mixture to the melted chocolate.
- Beat the egg whites until stiff with the salt and carefully incorporate into the chocolate
- Grease a tall mold, pour the preparation into it and press with a spoon in the center to form a hollow.
- Cover with aluminum foil and cook in the oven, in a bain-marie (with water up to half the pan) for 1 hour and 1/2.
- Once cold, unmold in a fountain.
- Whip half the cream without whipping it and add the sherry.
- Bathe the soufflé with this sauce and serve accompanied by the rest of the cream in a jug.
