This time we prepare an aubergine lasagna without meat, a delight without pasta and only with vegetables. Also known as “aubergine lasagna”, without a doubt, it is a wonderful dish that we can prepare from one day to the next, healthy and full of flavour, ideal for vegetable lovers!

This aubergine lasagna recipe can be made with multiple vegetables, although if we like to feel the flavor of this food, we recommend not adding too much. Read on to discover how to make eggplant lasagna, an easy and quick recipe that will surprise you.

Ingredients to make Eggplant Lasagna:

  • 3 eggplants
  • 500 grams of crushed tomato
  • 1 package of fresh mozzarella
  • 1 package of grated cheese
  • 1 pinch of pepper
  • 1 dessert spoon of oregano or basil
  • 1 pinch of salt
  • 1 splash of olive oil

How to make Eggplant Lasagna:

Wash the aubergines and cut into slices. Season them with salt and put them in a colander to release all the bitterness. For this, we will have them about 30 minutes.

Meanwhile, we prepare the fried tomato sauce that we will use to enhance the flavor of the eggplant lasagna without meat. To make it, put a good splash of oil in a pan and add the crushed tomato, black pepper, salt and oregano or basil. Let it cook until it thickens and the water in the tomato has been consumed, for about 30 minutes.

Trick: To make light aubergine lasagna, we recommend crushing two or three natural tomatoes.

Once the aubergines are ready, wash and drain them. Then, we cook the aubergines on the grill with a little hot oil. The cooking time will be just enough for them to be tender, approximately a couple of minutes per side.

To assemble the vegetarian aubergine lasagna, we take a suitable ovenproof dish and put a layer of aubergines, a little tomato sauce and pieces of mozzarella cheese. We will form two or three layers equal to this, ensuring that the last layer is eggplant.

Cover with grated cheese and bake until golden and gratin cheese. We have opted for a meatless eggplant lasagna recipe that focuses solely on the flavor of this food mixed with tomato and cheese, however, as we indicated at the beginning, we can add all the vegetables we want. Thus, we can make an aubergine and tuna lasagna, for example, or add all kinds of grilled vegetables.

When the cheese is golden, remove the tray from the oven and serve.
