Ingredients to make Lime Soup:

  • 2 chicken legs with thigh
  • 2 tomatoes
  • 1 chopped onion
  • 1 dessert spoon of cinnamon powder
  • 1 pinch of ground pepper
  • 1 pinch of ground cumin
  • 4 Yucatan limes
  • 2 cups of water (480 milliliters)
  • 2 cups of chicken cooking broth
  • 2 cloves of garlic
  • 1 teaspoon minced garlic
  • 2 cloves
  • 1 habanero chili (to taste)
  • 2 tortillas

How to make Lime Soup:

  1. Cook the chicken in a pot with water, 2 peeled garlic cloves, the cloves and a pinch of salt. When it is cooked, remove it from the heat, let it cool down to unravel it and keep the broth.
  2. Trick: Generally the breast is used, but with the leg and thigh, a more juicy lime soup is left.
  3. In a frying pan with a little hot oil, fry the chopped onion for a few seconds. Add the tomato cut into cubes, the teaspoon of minced garlic, the habanero pepper to taste, the cumin and the cinnamon. Sauté until the tomato changes color.
  4. Pour 2 cups of the broth that you had reserved from cooking the chicken and the water, as well as the sautéed vegetables with the spices, and let it boil. When it starts to boil, add the sliced ​​limes to give the soup that tart touch. Put out the fire.
  5. Cut the tortillas into thin strips, fry them and add them to the soup when they are well fried. Serve the Yucatan lime soup and enjoy this dish. You will see that this recipe for lime soup offers an incredible contrast of flavors and textures, unmatched by any other dish. As we said, you can make it with chicken breast, but the truth is that with thigh it is juicier.
