This light cauliflower cream recipe is ideal to prepare if you are on a weight loss plan or simply prefer to eat a little healthier since all its ingredients are low in calories except milk, but since in this case we use skimmed milk, This preparation is also a light cream of cauliflower ideal for diets and also for children, as they prefer to consume vegetables in creams and soups rather than simply cooked whole.

Ingredients to make Light Cauliflower Cream:

  • 1 cauliflower
  • 2 cloves of garlic
  • ½ white onion
  • 100 milliliters of skimmed milk
  • 250 milliliters of chicken broth
  • ½ teaspoon cumin
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 splash of extra virgin olive oil

How to make Light Cauliflower Cream:

  1. Getting all the ingredients ready is the first step in preparing this light cream of cauliflower.
  2. In a pot with boiling water and a pinch of salt, cook the cauliflower for 15 minutes, or until soft.
  3. Cook the finely chopped onion and the macerated garlic for a few minutes over low heat until the onion is translucent and season with salt and pepper.
  4. Take the cooked cauliflower, garlic, onion, chicken broth and skimmed milk to the blender or electric mixer, and blend until obtaining a homogeneous mixture for the cream of cauliflower for diet.You can also add vegetable broth if you prefer to accentuate the flavor of the vegetables.
  5. Bring the cream of cauliflower with chicken broth to a pot, cook for 5 more minutes and rectify the flavor with the cumin, salt and pepper.
