If you feel like traveling to the Caribbean without leaving your home, you are going to love this recipe for easy and delicious vegan burritos inspired by a meatloaf dish that is very typical of Jamaica and other Caribbean countries called jerk.
Jerk is a cooking technique that involves marinating shredded meat, vegetables or tofu in a mixture of spices. However, this recipe for meatless burritos is completely vegan, that is, it does not contain any ingredients of animal origin. It is made from jack fruit (jackfruit, yaca, breadfruit, etc…), a fruit native to Indonesia that is used to replace meat thanks to its texture identical to that of shredded meat. The green, unripe fruit is used, and can be found both fresh and canned.
These vegan Caribbean-style Mexican burritos with shredded vegetable meat combine the aromas and flavors typical of the Caribbean with traditional Mexican ingredients for burritos such as Jamaican spice marinade for jack fruit, black beans or sweet beans prepared with orange juice, peanut sauce, mango, etc.

Ingredients to make easy and tasty vegan burritos:
For the Jamaican shredded beef:
• 1 can of Jack fruit or jackfruit
• 1 tablespoon of oil
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon ground thyme
• 1 teaspoon sweet paprika
• 1 pinch of cayenne pepper
• 1 pinch of black pepper
• 2 tablespoons of lemon juice
• ½ teaspoon ground cinnamon
• ½ teaspoon ground nutmeg
• ½ tablespoon brown sugar
• 1½ cups of water (360 milliliters)
For the Caribbean beans or black beans:
• 1 cup cooked black beans
• 2 cloves of garlic
• 1 onion
• 1 tablespoon of oil
• 2 tablespoons of lemon juice
• ½ tablespoon brown sugar
• ¼ cup orange juice
• 1 teaspoon ground thyme
• ½ teaspoon grated fresh ginger
To serve the vegan burritos:
• 1 ripe mango
• 1 cup of lamb’s lettuce
• 4 wheat tortillas
• ½ cucumber
• ½ cup peanut sauce (recipe on my profile)
• ½ bunch of coriander
How to make easy and tasty Vegan Burritos:
Drain the jackfruit and wash it in a colander under running water to remove the flavor of the brine from the can. Remove as much liquid as possible by squeezing with your hands and drying the pieces of fruit with kitchen paper. Cut the Jack fruit into strips in such a way that it resembles shredded meat. In a bowl mix all the spices : garlic powder, onion powder, paprika, thyme, black pepper and cayenne pepper, cinnamon and nutmeg. Heat a pan with oil and add the shredded Jack fruit and Jamaican jerk spices. Cook 2-3 minutes, stirring occasionally, until the spices begin to release their aroma. Add the lemon juice, sugar and water. Cook the filling of the vegetable meat burritos 20-25 minutes until the water evaporates, stirring occasionally. When the shredded meat is ready, reserve it. To cook the black beans or kidney beans, heat a pot with oil and fry the chopped onion and garlic until the onion begins to turn transparent. Stir in the cooked black beans, lemon and orange juice, ginger, and thyme. Cook for 10 minutes, stirring occasionally.
To assemble the burritos without meat, spread the tortillas with the homemade peanut sauce and place the canons, the sliced cucumber and the diced mango on top. If you prefer, you can prepare the recipe for homemade wheat flour tortillas yourself. Place several tablespoons of beans or black beans on top and close the tortilla.
