• 1 kilogram of corn tortillas

• 2 cups of water (480 milliliters)

• 5 tomatoes

• 1 red bell pepper, seeded (optional)

• 1 clove garlic

• 1 piece of onion

• 1 cooked scrambled egg or other filling

• 1 splash of oil

• 1 epazote leaf

• 1 pinch of salt to taste

• 100 grams of fresh cheese

• 1 chopped onion

• 1 cube of chicken or vegetable broth (optional)

How to make Entomatadas:

To make the recipe for entomatadas, in a pot with enough water, boil the tomatoes and the red pepper for 8 minutes.

Trick: wash the pepper and cut it first.

Blend the tomatoes and the pepper with a piece of onion, a clove of garlic and half a cup of water from cooking the tomatoes until a fine texture is obtained. In a pot with a tablespoon of oil, fry the tomato sauce, add a cube of chicken or vegetable stock and 2 cups of water. Let it boil for 8 minutes, then add the epazote leaves and, if necessary, season with a little salt to taste, let the whole sauce cook for 5 more minutes, remove it from the heat and reserve it.
