Learn to prepare one of the most traditional dishes in Mexico, specifically from Veracruz. We present the enchiladas, but this time some cream enchiladas. Just as its name indicates, it is about delicious corn tortillas bathed in a guajillo chili sauce made with cream, this last ingredient provides creaminess and an exquisite flavor. Cream enchiladas, like many Mexican dishes, vary in ingredients depending on the region where they are cooked. You should know that the easiest way to enjoy it is just rolling the tortilla, but it can also be filled with scrambled egg, chicken, cheese or pork, as well as Serrano chili or green tomato in the same preparation of the sauce.
Ingredients to make Cream Enchiladas:
• ½ cup of milk cream
• 4 pieces of guajillo chili
• 2 pieces of tomato
• 2 cups of hot water
• 2 cloves of garlic
• 1 piece of onion
• Salt and pepper to taste
• Vegetable oil as needed
• 1 shredded chicken breast
How to make Cream Enchiladas:
To start the cream enchiladas recipe, first clean the guajillo peppers, remove the seeds, the stem and the veins. Take to a container with hot water and let stand at least 10 minutes to soften. When the chilies are softened, go to the blender with two cloves of garlic, a piece of onion, 2 tomatoes, a little of the water from cooking the chilies and half a cup of milk cream, blend everything for about 3 minutes.
In a pot, heat about two tablespoons of oil, empty the sauce and cook for 3 minutes. Season the sauce with salt and pepper to taste and boil for about 5 more minutes. To assemble the Veracruz enchiladas, lightly fry the corn tortillas so they take on a better texture. Fill with shredded chicken and a little of the cream sauce. Then roll up.
Bathe with enough sauce, add a little cream and grated cheese on top. The delicious cream enchiladas are ready to eat!

The most traditional way to eat this dish is just with the tortilla rolled up and dipped in sauce, but in addition to that you can prepare a scrambled egg and fill the tortilla.
