Ingredients to make Cheese Quiche:
For the filling
• 100 g brie cheese
• 100g gouda cheese
• 100g cheddar
• 3 eggs
• 200 ml cream
• A pinch of salt
• Nutmeg
For the base
• 150g flour
• 1 egg
• A pinch of salt and sugar
• 1 tablespoon ice water
• Sufficient flour (approximately 300 g)
How to make Cheese Quiche
Prepare the base: put the margarine in a bowl and add the beaten egg. Stir with a metal rod while incorporating the salt, sugar and lightly beat. Add the ice water and then the flour, which we will incorporate little by little with our hands, once we have obtained a ball of dough, stop kneading and wrap in plastic kitchen paper. Let stand in the fridge for 15 minutes.
Turn on the oven to 180 °C only from the bottom and prepare the filling: beat the eggs, leaving them very foamy, adding the cream little by little. Season with salt and nutmeg, grate the different types of cheese and pour over the eggs, set aside. Spread the dough on a floured surface with the help of a rolling pin, leaving it thin. Cover a tartlet mold of 20 centimeters in diameter, covering the edges well (pass the rolling pin over it, pressing it on top to remove the excess dough).
Fill with the cheese mixture and cook in the oven for 20 minutes only on the bottom and then on all sides, leaving it to finish curdling.
