Mushrooms are a good source of vegetable proteins, vitamins and minerals and, in addition, they are an excellent ingredient to prepare your vegetable dishes. One of the simplest recipes, but delicious, are the battered mushrooms. In this recipe that I share, I am going to teach you how to prepare a thick and tasty batter without eggs, based on vegetable yogurt, so that the mushrooms are tender. You can serve the mushrooms in batter as a starter with some sauce, for example, mayonnaise, aioli or vegan sour cream, whose recipe you can find on my profile. Ingredients to make Breaded Mushrooms:
• 300 grams of oyster mushrooms
• 150 milliliters of soy milk
• 75 milliliters of natural soy yogurt
• 1 squeeze of lemon juice
• 1 teaspoon salt
• 150 grams of wheat flour
• 1 pinch of black pepper
• 1 teaspoon smoked paprika
• 1 teaspoon garlic powder
• ½ teaspoon cayenne pepper
• 1 teaspoon onion powder
How to make Breaded Mushrooms:
To prepare the vegan batter, mix the yogurt, soy milk, lemon juice and salt in a bowl. Let stand several minutes. Add the mushrooms to the bowl with the mixture, cover well and let marinate for 1 hour. In this way, the breaded mushrooms recipe will have much more flavor. In another bowl mix the flour with the pepper, the paprika and the garlic powder and the onion powder. Remove the mushrooms from the marinade and coat them one by one with the flour mixture. Heat a frying pan with oil and fry the mushrooms in batter, turning them with the tongs until they are golden brown.
Place the fried mushrooms on absorbent paper to remove excess oil. Serve the vegan battered mushrooms with your favorite sauce, for example, eggless aioli, vegan mayonnaise or vegan sour cream as I have done.
