How to make Bacon Mini Quiche Lorraine:

Get all the ingredients ready to prepare our mini bacon Lorraine quiche. In a bowl mix the butter, sugar and salt, beating until integrated. Then add the egg and continue beating until incorporated.

Next, add the sifted flour to the quiche Lorraine dough and mix with a spatula. We reserve in the refrigerator. Meanwhile, we are going to prepare the filling for our mini quiches Lorraine. To do this, fry the leek onion in 2 tablespoons of oil until it is tender, then chop the bacon to put it with the onion and fry it all together. Preheat the oven to 180°C.

Beat the egg and add the milk cream, the grated cheese, the leeks with the onions, and a pinch of salt and pepper. Finally we have to assemble the mini bacon and cheese quiches. Then, in previously floured molds, we will put the quiche dough that we prepared. To achieve this we can make little balls that we will put in the bottom of the mold and distribute with our fingers until they are completely filled. Prick the bottom of these with a fork and bake them for 10 minutes at 180° C.

Then we will remove the molds with the dough from the oven, unmold them and immediately put the filling on them. Then we place the mini savory quiches on a tray and put them back in the oven for 5 minutes at 200° C and that’s it! These mini bacon quiche Lorraine are ideal to pamper the little ones at dinner time or to prepare for a party or meeting as an appetizer.
