Eating artichokes has been shown to help prevent obesity and bad cholesterol, as they are cardiovascular risk factors. Although it is a winter vegetable, it is present on the market all year round, so we can taste it whenever we feel like it. Likewise, it is very healthy for the stomach, so it facilitates digestion. For all these reasons, I propose a simple recipe for warm artichoke salad, very easy and quick to make.
Ingredients to make warm artichoke salad:
- 100 grams of peeled fresh beans
- 2 large artichokes
- 80 grams of sheep cheese
- 1 splash of virgin olive oil
- 1 pinch of salt
- 1 pinch of ground black pepper
- Assorted salad leaves
How to make Warm Artichoke Salad:
Heat plenty of water with a little salt, let it boil and add the peeled beans. Let them cook for 3 or 4 minutes, drain and reserve.
Clean the artichokes by removing the toughest leaves peel the tail and cut the ends, cut them in half and each half into 4 more parts. In this way, you will obtain a delicious salad of artichoke hearts.
Heat a frying pan with a little oil and sauté the artichokes. Add the reserved broad beans to the pan, season with salt and pepper, stir and let everything cook together for a minute.
To serve the warm artichoke salad, place the leaves on a plate and add the sauté mixture. Top with flakes of cheese and a drizzle of olive oil. You can use lettuce, escarole, arugula, lamb’s lettuce… whatever you like best! Likewise, you can add other vegetables to the warm artichoke salad such as green pepper or zucchini. You can cut the artichokes very thin and fry them in plenty of oil for a few seconds; you will get crispy chips for the salad.
For this artichoke hearts salad recipe you can also use canned cooked broad beans, add them directly to the pan and that’s it. This dish is ideal to serve as a starter for any other stronger meal, or as a garnish for meat, fish or vegetarian dishes.
