Although it takes some preparation, the recipe is very simple, so go ahead and follow the step-by-step vegetarian pasta salad with dried tomatoes, mushrooms, asparagus and a unique touch of basil.
Ingredients to make Vegetarian Pasta Salad:
- 300 grams of short pasta
- 1 pinch of salt
- 10 units of dried tomato
- 1 handful of dried mushrooms
- 1 bunch of Wild Asparagus
- 1 jet of oil
- 10 units of black olives
- 1 unit of Cucumber
- 1 unit of green pepper
- 1 pinch of black pepper
- Basil oil
- 10 grams of basil leaves
- 100 milliliters of olive oil
How to make Vegetarian Pasta Salad:
To prepare the vegan pasta salad, the first thing is to make the basil oil. To do this, heat a little water and place the basil leaves for a few seconds, it is important that the water does not boil. Then, remove them and put them in ice water until they cool. Then, squeeze with your hands; beat with the oil several times until you get a homogeneous liquid. Reserve.
Trick: To keep the basil fresh, do not beat the oil for a long time and let it cool between beating and beating.
Boil the pasta in salted water in the traditional way, leaving it a little more tender than normal. Drain and without rinsing, impregnate completely with the basil oil, stirring until it reaches room temperature. Separately, place a container with hot water and soak the dried tomatoes and mushrooms in it. Drain once tender and cut finely.
Next, chop and fry the asparagus with a little oil. In the absence of this ingredient, it is also valid to use frozen round green beans. In that case, stir until they lose the water and remain consistent. In the same pan, sauté the previously drained mushrooms.
