A salad with cherry tomatoes and black olives that by itself is already the queen of the table thanks to its color. With simple ingredients but with a very powerful flavor, its secret lies in letting the tomatoes macerate. The more time we give them, the richer this cherry tomato and olive salad will be!
Ingredients to make Salad with cherry tomatoes and black olives:
• 250 grams of cherry tomatoes
• 80 grams of pitted black olives
• 80 grams of pickled cucumber slices
• 1 handful of seeds for salad
• 1 splash of extra virgin olive oil
• 3 dessert spoons of Vinegar (the one with the pickles)
• 1 pinch of salt
• 1 teaspoon Salad Spice Mix
How to make Salad with cherry tomatoes and black olives:
Wash and drain the cherry tomatoes. We cut them in half and put them in a salad bowl. We add the oil and at least three tablespoons of the pickle vinegar and let marinate for fifteen minutes to half an hour. This way the cherry tomato and olive salad will be much tastier.
Trick: You can put the cherry tomatoes whole but I prefer to split them so that they absorb the dressing and do not turn out to be soft when you bite into them.
Add the olives and the pickle slices, mix and let stand a few more minutes so that they also take the dressing.
Trick: We can use whole pickles and cut them into pieces if we don’t have slices.
Season with salt and spices for salad. We add a handful of seeds to the salad with cherry tomatoes and black olives (in my case sunflower seeds, pumpkin seeds and pine nuts) Mix well and off to the table!
Tip: The salad spice mix is found in almost every supermarket. If you don’t have any you can put the spices you have at home (thyme, basil, cumin, pepper…) that you like the most, it’s a matter of trying!
