Rice and Shrimp Curry Salad Recipe

Ingredients to make Rice and Shrimp Curry Salad:

  • 2 tablespoons of curry
  • 350 grams of shrimp or prawns
  • 2 garlic cloves, minced
  • 1 teaspoon minced parsley
  • 1 pinch of pepper
  • 1 cup of long grain rice
  • 2 tablespoons wine vinegar
  • 1 cup plain yogurt
  • 2 tablespoons olive oil
  • 1 stick of celery
  • 1 teaspoon red bell pepper
  • 1 pinch of salt

How to make Rice Shrimp Curry Salad:

Steam the rice for 40 minutes. Let’s cool. In a saucepan over medium heat, heat half the olive oil. Add the shrimp there and sauté for 4 minutes, stirring during cooking. Add the paprika and continue cooking for 1 minute. Put the shrimp and paprika in a salad bowl and add the rice and celery. Season and mix.

In a bowl, mix the curry, garlic, vinegar and the rest of the olive oil. Then pour over the salad and mix well. Incorporate the yogurt, rectify the seasoning, sprinkle parsley and serve.
