Recipe for warm salad with mushrooms and prawns

Ingredients to make warm mushroom and prawn salad:

For 4 people

  • Leaves of lettuce, escarole, oak and Lolo
  • 2 boiled potatoes
  • 150 grams of mushrooms
  • 250g shrimp
  • 1 garlic clove
  • 2 spring onions
  • Toilet
  • Hojiblanca extra virgin olive oil
  • Vinegar
  • Salt

How to make warm mushroom and prawn salad:

Coat an oven tray with a good jet of oil and place the well-cleaned mushrooms on top. Season and sprinkle with minced garlic. Put in the oven at 180ºC -200ºC, for 8-10 minutes.

Peel the prawns and cook them in a pan with water and a little salt for 1 minute. Drain them and reserve them.

Clean the lettuce, escarole, oak and Lolo leaves well and drain them. Finely chop the lettuce leaves, place them at the bottom of a wide tray and season.

Cut the potatoes into slices, put them on the lettuce, and place the mushrooms on top.  Around it, arrange the escarole, oak and Lolo leaves.

Finely julienne the onion and spread it over the salad. Add the prawns and dress with the selection oil for salads, vinegar and salt.

To cook prawns well, you have to add them to the salted water when it is boiling and remove them when the water boils again, otherwise they will be dry and lose their typical flavor.
